My favorite dishes to make are the ones that are remotely “low and slow.” Of these, Japanese Beef Curry is possibly my most favorite. It is the most deceptively simple yet profoundly satisfying dish I know to command great respect from all who eat it.

The humble stew combines tender beef, aromatic onions, and sweet carrots. But it (somehow) manages to simmer in a rich curry sauce, of which I am quite proud.

And there are two reasons for which I need to give a shout-out to the sauce.

Japanese Beef Curry Recipe Ingredient Quantities

  • 500g beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, peeled and cut into chunks
  • 3 cups water
  • 1 apple, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 100g Japanese curry roux (blocks)
  • Salt and pepper to taste
  • Cooked rice, for serving

How to Make this Japanese Beef Curry Recipe

1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and sear on all sides. Remove and set the meat aside.

2. In the identical saucepan, combine the diced onion and continue to sauté until the onion is tender and has taken on a slight caramelization.

3. Place the sliced carrots and potato chunks in the pot and stir for about 2 minutes.

4. Place the beef back in the pot and add 3 cups of water. Bring it to a boil, then lower the heat and allow it to simmer for 20 minutes.

5. Add the grated apple, soy sauce, and Worcestershire sauce. Keep on a simmer until the beef and veggies are tender, around 15-20 more minutes.

6. Take Japanese curry roux blocks and break them into smaller pieces before adding to the pot. Stir well to ensure they fully dissolve and thicken the sauce.

7. Cook for an additional 10 minutes, stirring from time to time, until the curry has reached a thick consistency and all components are completely blended.

8. Adjust the taste and seasoning with salt and pepper as necessary.

9. Serve the curry made with Japanese beef hot, over rice that has been cooked.
