How to Make this

1. Rinse 2 cups sushi rice under cold water until water runs clear, drain, then combine with 2 1/2 cups water in a pot, bring to a boil, reduce to low, cover and simmer 18 minutes; remove from heat and let rest covered 10 minutes.

2. Meanwhile, heat 1/4 cup rice vinegar with 2 tablespoons granulated sugar and 1 teaspoon fine salt in a small saucepan until sugar dissolves; cool slightly.

3. Transfer cooked rice to a shallow nonmetallic bowl, gently fold in the vinegar mixture with a rice paddle or wooden spoon while fanning to cool until glossy; cover with a damp towel to keep warm.

4. Prepare fillings: seed and julienne 1 medium cucumber, peel and julienne 1 medium carrot, julienne 1 small red bell pepper, slice 1 large ripe avocado, and trim 8 asparagus spears; blanch asparagus in boiling water 1 to 2 minutes, then plunge into ice water and pat dry.

5. Place a nori sheet shiny side down on a bamboo sushi rolling mat lined with plastic wrap if using; wet your hands and spread a thin, even layer of rice over the nori leaving a 1 inch border at the top edge.

6. Sprinkle a few teaspoons of toasted sesame seeds over the rice, then flip the nori so the rice faces down on the mat; arrange a strip each of cucumber, carrot, red pepper, asparagus and avocado across the center of the nori.

7. Use the mat to roll the nori over the fillings, pressing gently but firmly to form a tight roll; seal the edge with a little water on the nori border.

8. With a sharp, wet knife, slice each roll into 6 to 8 pieces, wiping the knife clean between cuts to keep slices neat.

9. Arrange rolls on a platter, sprinkle extra toasted sesame seeds if desired, and serve with pickled ginger, soy sauce and wasabi paste.
