Ingredient Quantities
- 2 cups chopped fresh green beans or 14 oz can low sodium green beans drained
- 1 cup whole wheat flour or oat flour
- 1/2 cup rolled oats
- 1 large egg beaten
- 2 tablespoons olive oil or melted coconut oil
- 1/4 cup low sodium chicken or vegetable broth or water
- 1 tablespoon ground flaxseed optional
- 1 teaspoon dried parsley or 1 tablespoon fresh parsley optional
How to Make this
1. Preheat oven to 350 F 175 C and line a baking sheet with parchment or a silicone mat.
2. If using canned green beans drain them well and pat dry with paper towels. If using fresh chop them into small pieces.
3. Pulse the green beans in a food processor until finely chopped or lightly mash with a fork so there are no big chunks but still some texture.
4. In a bowl mix 1 cup whole wheat or oat flour, 1/2 cup rolled oats, and 1 tablespoon ground flaxseed if using, and 1 teaspoon dried parsley or 1 tablespoon chopped fresh parsley if using.
5. In a separate bowl beat 1 large egg then stir in 2 tablespoons olive oil or melted coconut oil and 1/4 cup low sodium chicken or vegetable broth or water.
6. Combine the wet mixture with the dry ingredients and the chopped green beans. Stir until it forms a dough. If it seems too wet add a tablespoon of flour at a time until you can handle it. If too dry add a teaspoon or two of broth.
7. Turn the dough onto a lightly floured surface or between two sheets of parchment and roll or press to about 1/8 inch thick. Cut into small shapes or slice into squares with a knife. Smaller treats bake more evenly and get crunchier.
8. Place pieces on the prepared sheet about 1/2 inch apart and bake 20 to 25 minutes until edges start to color, then flip each piece and bake another 10 to 15 minutes until golden and very firm.
9. Let the treats cool completely on a wire rack they will crisp up as they cool. If any are still soft return to oven a few minutes longer.
10. Store cooled treats in an airtight container at room temperature up to one week or freeze for up to three months.
